In honor of International Bacon Day ( http://en.wikipedia.org/wiki/International_Bacon_Day ) I had me a mess of peppered bacon for brunch. Tonight I think I may let the casino across the river do the cooking, since it's all-you-can-eat-Prime-Rib-and-Crab-Legs night in the buffet.
Labor Day 2014. Time for hamburgers and hot dogs. But, too hot to BBQ. So, had hot dogs for brunch with vanilla yogurt. Dinner, hamburgers, prepared somehow, I don't know yet. Unless it's too damn hot to eat again, like the last few days.
Labor Day dinner was easy to make. Carl's Jr new Texas BBQ Thickburger with a side of onion rings. I got the double half pounder with triple cheese and extra BBQ sauce. I only ate half of my meal. It was the BEST mass produced fast-food cheeseburger I've ever had!
On the way home from meetings in Las Vegas, I just had to reroute through Kingman, AZ to *******'s BBQ. It's amazing how expensive it's become, but it's worth it - $60 for a 4 lb heap of hickory smoked pulled pork and enough of their special homemade bbq sauce to smother it all. It made a tasty treat for dinner last night, but it will make a great lunch for the office today! Our accountant hasn't stopped whining about missing it since she left Kingman to work for us.
They can get away with it because they have no competition, George. But I'll put up Denise's mesquite smoked pork butt against theirs any day, even though I like the hickory for pork myself. Mesquite is native to this area, and hickory would never survive, so it's more 'authentic' to my mind.
Maybe right after I win the PowerBall Saturday night, I'll set her up in business head to head against *******'s!
Friday night breakfast: scrambled eggs with cheese, grits, homemade pork sausage with lots of sage, fresh baked biscuits with sweet cream butter and peach preserves, all served with lots of sweet tea.
Too hot to eat, but all I had was a spinach salad for brunch. Big Booger showed up with Connal's, a local fast food joint here in SoCal that is better than the typical fast food joints. I had the Patty Melt (only half) and fries (only half).
Was watching this episode of Diners, Drive ins & Dives, and this veggie filled spaghetti squash looked good. Since I had this one in the garden, I made it with a salad for meatless Monday. The filling was onion, celery, carrots, green & red peppers, Hungarian sweet peppers, broccoli & cauliflower, all saute'd in a little olive oil and butter before being stuffed back into the squash shell after scraping it out. Also made the quick marinara to go with it. Sunday we were busy all day, so we just whipped up BLT's on homemade Italian bread & kettle chips for dinner.
Still too hot the cook dinner, but not enough to not eat something. Dinner was a 240 calorie Lean Cuisine Meatloaf and mashed potato dinner. Not bad. Bad food tastes great when you're hungry enough.
Bad food is bad food, period. When I was in the local hospital for a week or so for surgery, I lost 32 lbs. Not for lack of appetite, but the food was absolutely inedible!
Of course, now I've gained it all back plus some, and instead of returning to my legs, arms and shoulders, it all gathered around my waist...
Had a widower friend over tonight for dinner (I called him and told him the priest said we needed to do a corporal work of mercy for penance. LMAO). Kind of a throwback pot roast meal like I grew up on every Sunday. Got plenty for dinner tomorrow and sandwiches all week for lunches.
Breakfast burrito for dinner. With scrambled egg, cheddar cheese and breakfast sasuage. Little booger ate all the tater tots I made for them as an after school snack. I grounded him for six months and making him peel a 10 lbs. sack of potatoes only using his fingernails to peel them. He then must turn them into hash browns for breakfast for the next several days.
The Old Farts Patrol (too old scouts) went on our annual canoe trip this past weekend down the Allegheny River from Franklin, PA to Emlenton, PA...about 35 miles on the water. Spent two nights on the river and ate pretty well. Our motto is..."Eating poorly on a camping trip is a personal choice." We choose to eat (and drink) well. Friday night was salmon filets over the open fire, with wild rice and a salad of Spring greens. My twin brother made pineapple upside-down cake in a dutch oven for dessert. Beautiful & delicious! Saturday we filled two dutch ovens with chicken quarters, onions, potatoes, carrots and celery, then threw in the leftover rice from the night before. Damn fine eating there! We had phenomenal weather from Friday thru Sunday, and nobody went away hungry. No special order here, but you'll get the idea.
I like the way you think. That's our motto as well. That pineapple upside down cake makes me want to lick the computer screen. Deer camp is coming up in two weeks. Each of us is responsible for one dinner for the group. My offering will be bacon wrapped dove as an appetizer, mixed green salad, 2 inch thick ribeye, garlic mashed potatoes, roasted carrots and for desert peach cobbler.
Got busy this afternoon making some twice baked potatoes for the freezer with the 10# of Idaho potatoes I bought for $1.98, but not before I had my very first EXPLOSION in the oven. Before anyone calls me a food dummy, YES, I did pierce all of the taters with a fork before rubbing with salt and putting them in the oven. I guess these were "self-healing" potatoes. LMAO! Yeah, it was a real PIA to clean up that mess, and I had to cool down the oven before cleaning, then get the oven hot again because I had three loaves of Italian bread on final rise. Got done about 15 minutes before the loaves had to go in, but I had to wait for the potato "remnants" to finish burning off and stinking up the kitchen. Phewwww... What a freaking circus. And to think I was hoping to get a nap this afternoon...
Also made a small batch of sauce with Jenny-O Turkey Italian sausage to see how it was. Surprisingly, it's almost the same as pork Italian sausage, including the texture. Pasta was the logical thing for dinner since the sauce was fresh. Mmmmmmmmm...

Wow that's some mess like the thermostat went nuts or just a few potatoes did...but a favorite of ours, beats just plain baked potatoes. When we do plain baked we often just use the microwave for fluffy light BPs.
And in the oven we now often thin slice the potatoes but not all the way through, slightly fan or open them out, add some olive oil, salt & pepper. It's like a combination of BPs and home fried potatoes. My wife also uses Italian dressing or other seasonings in another variation which can be MW, oven or grille. I'll have to get her notes on that.
They cook faster, just watch until they are tender (pass the fork test) keep an eye on them!
Try it you'll like it.
To demonstrate how little class I have..my first thought after seeing your bread was..ice cold chocolate milk, with hot bread and butter. But that's just me.
