Were having "Salad" (salad was the name of our red angus steer)

T-Bones, Burgers, and Becks Broiled taters, and I think shes got some corn and green beans on the stove...mmmm:)

I fix us a breakfast of English Muffins ( plain )- Canadian Bacon - Scrambled Eggs and a slice of American Cheese once a week. I was wondering how difficult it is to make the muffins. The brand we buy is pretty good, but homemade would have to be better. Your recipe, or one off the net?

English Muffins (Lower calorie variant)
From the Kitchen of: Joe Valencic
Makes 12 or 20 Muffins

Ingredients:

11-1/2 oz. of 2% milk
11-1/2 oz. warm water (less than 110F)
3 Packets Stevia (or 3T white sugar)
1-1/2t Salt
1-1/2T Shortening (Crisco)
2-1/2t Instant yeast
19-1/2 oz. All purpose flour
1-1/2t Baking powder
As Required - Non-stick spray
As Required - Yellow cornmeal

* Special equipment: electric griddle, 3-inch metal rings. Cast iron pan is optional; just make sure you have a cover that fits the pan. Be careful, as the heat is hard to control with cast iron.

Directions:

In a bowl, combine the milk, water, Stevia, and salt, and microwave for 1 minute on high power. Let cool to less than 110F. In a ramekin or small bowl, microwave shortening for 15 seconds on high to melt, then quickly whisk it into the warm milk mixture. Add the flour and beat thoroughly with wooden spoon or whisk. Cover the bowl and let it rest in a warm spot for 30 minutes.

Preheat the griddle to 300 degrees F.

Add the 1-1/2 teaspoon of baking powder to mixture and beat thoroughly. Place metal rings onto the griddle and spray with vegetable spray. Dust pan bottom inside the rings with fine cornmeal. Using #20 ice cream scoop, place 2 level scoops into each ring and cover with a pot lid or cookie sheet and cook for 6 minutes. Remove the lid, remove rings from muffins and flip muffins with spatula. Cover with the lid and cook for another 6 minutes or until golden brown. Place on an open wire rack and cool. Split with fork, toast and serve with your favorite topping.

Gonna post an experiment my Wife cooked tonight. If you don't like Portobello mushrooms, no need to read any further.
The 'hollow' was about 3 1/2 across, rubbed down with Olive Oil.. She stuffed them with an even mixture of Goat and Feta cheeses. Added Spinach, and wrapped with a stretched piece of Bacon. In the oven at 350 until the bacon was done, not fatty, not crisp. I know it is different sounding because of the cheese mixture, and it was in-your-face flavor, but really good.

As a side, we had the basic Mozzarella cheese, wrapped with very thin Prosciutto and she roasted some Red Bell peppers to slice up for the top.
Odd sounding meal together, but it worked. Sweet - cold VS earthy in your face.

I already told her last nite that I'm tired of meat-starch and veggies.

Mama's turkey meatloaf, ******* mashed potatoes, steamed corn and salad. Good dinner for the second night.

Going on an outing this coming weekend with 10-11 guys. I'm making Corn Chowder and grilled cheese sandwiches for the Saturday lunch, so I made the whole wheat sandwich bread today for that. Once it's cool I'll slice it, bag it and freeze it.

I was off for the "Old Fart's Patrol Winter Hike & Food Fest" from Friday thru this morning, so I didn't have much time to post. Thursday night I took Mama to Outback so I didn't have to cook & cleanup. Had a nice 12oz prime rib, which I too half of it home. Friday night was appetizer buffet dinner for 10 guys, and all the booze you care to consume since we were in cabins and didn't have to drive anywhere. By the time I got around to remembering pictures, the appy trays were severely picked over, and not worthy of a picture.

I made corn chowder & grilled cheese sandwiches for lunch after hiking 3.3 miles through the hills of Salf Fork State Park in Central Ohio. It hit the spot and was the right meal after a cold walk.

Saturday dinner was a mushroom & spinach stuffed pork loin with pan fried redskins in bacon grease, and pan gravy from the pan drippings. Appetizers were enjoyed for 1-1/2 hours, so we passed on a salad. 10 guys didn't care. We had peach, apple & pecan pies for desert.

A little late but here's a picture of some of the Super bowl spread. Bleu cheese bacon dip, grilled chicken, chili, Swedish meatballs, smoked ham,7 layer dip, smoked venison and cheese platter and some vegetables, not really sure how the vegetables got in there.

Brunch, and the only meal of the day, was a Pastrami on Rye with Mustard and a side of Sweet 'N Spicy Pickle Chips and Pepperoncinis.

6 cups of heavy cream, lots and lots of butter and parmesan cheese along with 2 pounds of fettuccini = more Fettuccini Alfred than we could eat in a week.

Big Booger brought home dinner. Didn't cost me a penny. I like that. H.Salt Fish and Chips. Haven't been there since I was a kid. Pretty good.

My Wife uses Panko on Chicken / Chicken wings ( baked ), Shrimp, fish and more. She loves the texture, I love the texture, and that's all that counts. If it's something that tastes better if it's crunchy ( fried, of course ), Panko is the answer.
The wings are first marinated in butter milk , and hot sauce to taste ( overnight ), rolled in flower, dipped back in marinade and rolled in Panko. Baked on a rack at 425 for 15 minutes, turned, heat down to 350 for 20-25 minutes - internal temp checked. Crispy - spicy - no grease at all. Decent.

I asked my wife what we were going to have for dinner tonight. She pulled some snow crab legs out. OK..She asked if I was out of any of my cereals. Yep. Did I want anything special this coming week? Just pick up some hamburger and a couple steaks. OK.
While were eating, she talked abut the grocery store. I wish she hadn't.

Hamburger = 7.00 a pound.
Standard size cereal = 7.00 a box. My large frosted flakes = 10.00 a box.
Ribeye steaks = 18.00 a pound.

I haven't been to the store w/her for years. What a shock. I don't know if she's trying to keep me from eating, or what.
