Were having "Salad" (salad was the name of our red angus steer)

T-Bones, Burgers, and Becks Broiled taters, and I think shes got some corn and green beans on the stove...mmmm:)

GF and I couldn't be together tonight, so we had Valentine's yesterday. Problem was, the reservations were made for today and had to cancel. Last minute plans thanks to her pa.

So, we wanted to go to Tacos el Paisa again, but we waited too late. They closed at 6PM. So, the only thing that looked good that was nearby was In 'N' Out. This gal is a keeper, IMO!

Had a Double Double Animal Style and Animal Fries. Dessert was Red Velvet Valentine's cake. Sorry, no pics. Might have one later when I have another slice today.

Brunch today was a banana.

The wife is watching the grand kids at their house overnight, so I was on my own for dinner. I chopped up some onion, Brussels sprouts, broccoli, cauliflower, red & orange peppers, & zucchini, then added a couple of eggs, cooked breakfast sausage, salt & pepper and some Mozzarella and sharp cheddar cheeses. Baked it in ramekins at 350F for 20 minutes, then topped with Sriracha chili sauce and called it dinner. Outstanding & filling.

The wife made dinner at the daughter's house (Tacos...yuk!) before coming home, so I was going to go to the Chinese buffet to pig out on seafood. I looked at the outside thermometer and it said 9F, so I scratched that idea. Went to the fridge and decided that since I still had more veggies, that I would make a variation of Pasta Primavera. I sauteed the veggies in butter, EVOO and salsa. When the veggies were almost done I topped them with a handful of Mozzarella cheese. Boiled up some pasta shapes and mixed it all together, finishing it off with Shriracha sauce. Turned out delicious.

Not if you cook them quickly to 160 degrees and get them the hell out of the pan. I use my raised-rib cast iron pan on medium high heat, and keep the pan covered with foil throughout the cooking process. This allows the steam under the foil to help cook the top of the chops without the moisture escaping, while applying heat from below from the pan. Try it, you'll like it, and learn that "Moist" and "pork chops" really do go together.

Instant replay of a new favorite from just a few weeks ago (1-25-15)...Broccoli-cauliflower casserole. Since casseroles aren't very attractive, I'm just posting the same picture from the first time I made it, because it looks the same. Like last time, I added 1/2C of rice (dry wt.) and 10oz. of grilled chicken breast that I diced and mixed throughout.

Big Booger showed up with dinner when I had no plans to eat. I swear, this kid is trying to kill me with fast food, I'm telling ya! Chick Fil A. Never had it before, even though it's three block down the street from us and three blocks over. It was only OK, nothing special. At least the good part again was, it didn't cost me one penny. :)

I'm having reruns tonight. I made an old favorite last night that I call "Swine Pie," my Granny called "Pig in a Poke," and my online friends across the Pond call "Toad in a Hole."

I fry up a mess of link pork sausage in a cast iron skillet, whip up a batch of Yorkshire Pudding batter, then pour the mess over the hot piggies and toss the lot into a preheated 450F oven for a half hour. The pudding fluffs up, turns golden brown on top, and usually burns on the bottom, but it's a yummy delight when it comes out of the oven. It's a skillet full of heart attack, and pure heaven to eat. The only symbolic crumb I toss to health consideration is that I immediately drain off the hot fat as soon as I take it out of the oven, else the grease will be absorbed by the pudding in about a minute.

Someday I might post a pic of this concoction, but last night I was too hungry to fetch the camera.

British folks call that "Toad In The Hole."

New recipe Little Booger wanted me to try. Mexican casserole he got from his best friend's mom. It's OK.

I fixed glazed chicken wings, scalloped potatoes, steamed Brussels Sprouts, and a loaf of my black-olive Mediterranean spice bread.
Got enough sides lefties for tomorrow, so will just grill a couple tenderloins -

No pics but I made a pot roast in the crook pot with potatos and carrots and a loaf of extra sourdough bread.

Made a crust-less quiche for dinner. Loaded with everything from the veggie drawer, plus bacon that I cooked crispy, then finely chopped and mixed into the casserole. I topped it with Provolone & Mozzarella, then drizzled Shriracha before having my religious experience. LOL Toast with butter & blackberry preserves as well.

When we first got married, we didn't have a Pot, or a window to throw it out of. We ate a LOT of quiche, I do mean a lot. It was cheap and filling. I know it's probably wrong on my part, but when I left my GP's home, I ran smack into the word poor, while living with my mother. All those memories can be found with little trouble. That era probably helped create who I am now. My wife loves quiche, I will no longer eat it. That's not fair. But you brought it up. :D An addition of crispy Bacon may make me go there again.

Dinner yesterday in pics below. Dinner today was pulled pork sandwich with homemade beans.

Bologna Cheese Sandwich with Campbell's Cheese, Beer, Bacon, Potato Soup and Ben & Jerry's Ice Cream. That B&J is my new favorite!

Here are me (gray t-shirt) and Glen, the head of catering at our church. I was browning up pierogis & onions on the flat top grill while he was frying fish & fries while a photographer was assembling a story on local fish frys in the area. My 15 minutes of fame.

I left the kitchen early after I went through 4 cases of pierogies and helping the baked fish guy prep 5 sheet pans of Alaskan pollock. He preped and baked 20 sheet pans of fish, which was 5 cases. Last week we sold 550 meals from 5-7:30 pm. That's a butt-load of work for 20 volunteers.
