As I got older, particularly when I past age 50, I started trying things I had previously either dislike for their taste, or for their PERCEIVED taste. Like you, I learned what I had been missing out on. This meal above is a blend of a couple of recipes, but the base comes from http://www.kalynskitchen.com/2015/01/low-carb-mock-lasagna-spaghetti-squash-casserole.html If you've never had spaghetti squash, you're missing another treat to the taste buds. We use it frequently to replace pasta for the mouth feel, and nobody I've ever fed it to has ever disliked it. We love it topped with marinara and some grated Parmesan cheese.
The Butterball brand turkey Italian sausage is not as flavorful as some, but when I added cracked fennel seeds (pulsed them in the mini blender), it made the sausage "pop" with flavor. This is a trick I learned just recently.
I'm an adventurous eater, and will usually try anything at least once. We love Spaghetti Squash around here, but have never tried to microwave it. I like it with butter, salt, and pepper. We just let it cool a bit, cut it in half, add butter, salt, and fresh ground pepper. Serve it, and eat it right out of the shell. But usually I just plate it, and cover with some Newman's Own Alfredo Sauce, after I doctor it up a bit. Served with vegies of your choice, it makes a great meal.
Last night we had Hamburger Helper, Double Cheese Burger. After browning the hamburger, I added some taco seasoning, some chopped green onions, and some chopped mushrooms. Added the wet, and dry ingredients, put on the lid to simmer. Nuked some broccoli, and added that to the finished dish.
My wife's version of Chicken Cordon Bleu. Every time she cooks it, I ask where are the vegetables. She says there is mushrooms, cheese, and ham inside of it so you don't need anything else. I ate it with Lays potato chips tonight!
We have your Joe McMuffins both for breakfast, and dinner about once a month. My wife and family call me Joe. My middle name is Joseph. Appropriately named as far as I'm concerned.
Cooked up some sweet Italian Sausage, and cut it into bite sized pieces. Cut two large onions in half, and sliced them. One large Idaho potato, also cut into bit sized pieces. Garlic to taste. Cooked the onions, taters, and sausage until taters were done. I call it Italian Home Fries! No pictures, we ate it all! Picture from Bobby Faly.
Pork stir fry with vegetable fried rice. No pics as we had a widower friend over for dinner, and the Mrs said it was tacky...whatever (roll eyes). Anyway, y'all have seen my stir fry more than once, and it still looks the same.
Two baby back racks cut in half. Each half treated differently (different strokes for different folks). All were cooked 2-2-1. The texture was just enough pull on the meat for it hold on the bone. The teriyaki, KC Masterpiece and Sriracha/garlic all had a KC rib rub on them. The other half was seasoned with Shahloobs seasoning that I usually use on tri tip and then basted with apple juice. The big winner in our house (at least with my kids) was the hoisin teriyaki sauce. My favorite was the Trader Joes Sriracha/garlic sauce. My wife doesn't like regular BBQ seasoning so she had the apple juice basted, which was really good.
Sunday I made a pork shoulder roast, smashed taters, roasted carrots, corn & coleslaw. An old school Sunday dinner. Had the leftovers for dinner tonight and put the rest in the freezer.
Also made some freezer goodies. Whole wheat bread, sandwich thins and English Muffins.
We sure have some good cooks here! I had leftover t-bone from Denise's birthday celebration, but I passed on that in favor of frying up a mess of bacon, then browning a sliced russet spud in the grease with a mess of onions. I'll have the t-bone tomorrow when I get back from Phoenix.
Well, let's see what I've been up to besides working. Made up a loaf of Slovenian white bread & sandwich thins for lunches yesterday. In the past few days I also made zucchini rollups with breaded zucchini strips for dinner one night, and another we had grilled chicken breast on a bed of Spring greens. Me and Mama are headed to the oldest daughter's place for Father's day dinner today, and I'll be bringing Italian herb sourdough no-knead bread. It's fermenting as I type here, and will be made around 5 am. Actually, I'm going to make two loaves, with one going to the new neighbors as a welcome to the neighborhood gift. Everyone like food gifts. Hope I remember to post them when they come out of the over. This is one of my favorite breads, and pairs beautifully with Italian meals, especially ones with sauce.
Pizza Hut Dinner Tonight for Father's Day. Didn't cost me a single penny. Beef and Onion and Pepperoni and Sausage with Bread Sticks and Hershey's Brownies for dessert.
Cioppino and linguini by eldest DD and DS. Mmmmmm! Hummingbird cupcakes with cream cheese frosting by middle DD. Great dinner and gifts from the kiddos.I donated all of my XL shirts to homeless veterans clothing drive, and I got 4 new ones today. But no Gold Toe socks, which I REALLY need. Guess I go shopping tomorrow.
After losing about 15 pounds the past few weeks, (boys aren't here that much, so no need to make any dinners), all bets are off the holiday weekend. Starting off, chili cheese dogs and chili cheese fries and malted chocolate frozen custard for dessert.
Tomorrow, smoked ribs. Like I said, all bets are off.
A bit late with the 4th of July dinner pics, but I was busy. It was just too hot to smoke ribs, hot and humid. And a "guest" who invited herself over, asked what she could bring. I said beer. So, she shows up with Budweiser knowing what beer I like. The beer I don't like is Budweiser.
Oven roasted ribs, mac salad, homemade beans and rib fat fried 'taters.
