Received a nice package of deer chili meat. Looking for some experienced cooks for a recipe. My wife is not crazy about the idea so if I can get a recipe that takes out some venison taste that would be great. I used work with a guy years ago that could chicken fry and it was absolutely delicious. I like a little kick in mine to make me wipe my eyebrows.
I've been wanting to ask for a good venison chili recipe myself. I'm sure we'll get a few to try. Although I'm not sure about making my venison not taste like venison.
I start with Carroll Shelby's or Wick Fowler's. Good starting points. I brown my meat with onion, garlic, and green chilis. I use beef stock instead of water and add ancho chili powder and extra cumin. I also add a bit of sugar but don't use the cayenne or masa.
Beans on the side...........
This ain't much of a recipe but I make either venison chili or Tacos just about every Sunday after Church.
Here is my chili recipe:
1 pound (give or take) of browned ground Venison
1 can of Bushes Chili Magic
1 can of chili beans (any cheap brand)
1 can of diced tomatoes (any cheap brand)
Hey it ain't anything unique, but it tastes good and you can't tell the difference between between the deer meat or hamburger meat.

Try this
2lb of ground deer (browned) 3 strips chopped fryed of bacon per pound
2 or 3 cans of red kidney beans (juice and all)
one can of Cambles tomato soup
one small can of tomato past
garlic
half package of dry Lipton onion soup mix
and chili powder.
All the ideas look great. I may just a little dab from each and see what happens. I do like my on the warm side. Enough to make me sweat!
