In my opinion this is the best video on field dressing when gutting:

This video shows you how to cut around the anus, remove the penis, scrotum and or mammary glands.

This guy also has a skinner and butcher video.

the 10 minute deer skinner demonstrates skinning the deer in camp. I prefer hanging the deer to skin at camp and or my garage.
