Mea culpa, mea culpa. I've been absent from here since last August (sometimes life gets in the way), so I figure I'd better make my return in style, so here it goes...POTATO BOMBS!!!! Here's how to do them.
Core russet baking taters with an apple coring tool. Cut the plugs into thirds and save end plugs.
Make a filling for the holes. For this batch I used ham, cooked salami, mozzarella & sharp cheddar cheeses, but you can use various lunch meats, sausages, hot dogs and any number of different cheeses.
Plug the holes to hold the filling in while baking.
Wrap the potato with a whole strip of bacon.
Wrap in aluminum foil and bake for 1 hour 15 minutes at 375F.
A thing of beauty when fully cooked.
Cut lengthwise and apply your favorite topping(s). I used ranch dressing and Sweet Baby Ray's BBQ sauce.
