Default Broiled Venison Chops

8 Venison chops
meat tenderizer
butter
salt & pepper

Cut venison chops 1" thick. 1/2 hour before broiling, moisten meat and sprinkle with meat tenderizer. Pierce chops in several places with fork. Just before broiling, apply butter to both sides of chops. Place them in a hinged grill and broil over hot coals 5 min. per side. Chops will be medium rare.(as cooking venison longer than this will bring the iron out of the meat, making it taste like liver.) Salt & Pepper just before serving. SERVES: 4-8 (A chop from a 200 LB deer will serve 1, while it will take 2 chops from a 90 LB animal to provide a serving.)
