Preheat oven to 350°.
Spray or grease a two-quart casserole dish with cooking oil. Ingredients: 12 eggs (yup, dats a buncha eggs) 1 cup plain yogurt 1 teaspoon Lawry's seasoned salt (or, to taste) 3/4 stick butter or margarine 2 cups shredded hash brown potatoes (thawed) 1/4 cup (or less) chopped onion, (aw heck dice up some jalapenos in there wimp!) 1 cup grated sharp cheddar cheese Beat eggs, yogurt, and salt together. Melt butter and lightly sauté onion. Add thawed potatoes. Stir to mix. Pour in egg mixture and lightly stir to blend ingredients. Pour into casserole dish. Sprinkle grated cheese over casserole. Bake at 350° for approximately 25 minutes or until knife comes out clean when inserted. Cut into 8 squares. Crpdeth

The hash browns and yogurt are a different twist from the breakfast casserole recipe I have. I'll have to give this one a try!

OK, I finally dug out my recipe box. Here is the basic recipe:
6 slices bread 1 lb bulk sausage 2 c. milk 6 eggs 1˝ c. grated cheese Crumble bread into baking disk. Brown sausage and drain well. Add to baking dish. Mix together milk and eggs. Pour over ingredients in dish. Sprinkle cheese over top. Cover and place in refrigerator overnight. Bake uncovered at 350° for 35-45 minutes. This can be enhanced with sauteed onion and/or bell peppers. And yes, Crpdeth, you can even add some jalepenos to it. ![]()
