Came across one this on the Net. I definitely have way too much free time on my hands.
Anyway, I thought to myself, why not help out all those Texans around here? Armadillo Casserole Two lbs. armadillo meat (Road kill????? )8 ounces of butter Lemon juice Dash onion salt Salt to taste Pepper to taste Lemon pepper to taste Season with salt, pepper, lemon pepper, lemon juice, and rub with butter. Wrap in foil and bake at 325 degrees F. for approximately 45 minutes. Remove foil, add more butter and brown. For barbecued armadillo, baste with barbecue sauce over grill after removing foil. Sounds yummy! Now, if I could just find a receipe for Javalina . . . ![]()

Surely y'all know that those cute little Armadillos carry Leprosy and should never be eaten or handled really.

I lived in south america for two years as a mormon missionary & we ate silage corn & boiled squash most of the time. We used to eat armadillos whenever we could. we'd roast them in an oven. That greasy meat was just what we were hungry for. We'd shoot them with a .22 . we weren't hungry enough for roadkill. I showed up in south america weighing 140 & 6' tall & left 2 years later at 110 pounds. Just not enough armadillos to eat. I remember being hungry for spam too
I got back to the states, got married & went right to 230 pounds.I've also heard squirrels are showing up with bubonic plague. Don't know if that's true or not. |

Can't remember where I got my recipe, might have been this forum.....
But very similar to yours Pistolenschutze. Two lbs. armadillo meat, if road kill, clean tire marks off with kerosene. Bag of frozen stew vegetables 12" x 12" oak board Place armadillo meat on oak board with vegetables, Bake at 325 degrees F. for approximately 45 minutes. When meat is golden brown. Scrape everything off oak board into trash..... Eat board.... ![]()

Texas. Great country. The memory of my first trip through in the 70s centers on two women (mother - daughter?) that picked me up while hitch hiking. She (the driver) was always a little ambiguous about whom was related to whom, but the other young girl was, well, younger, and more engaging then her companion.
Can't go into much detail here, but I have liked Texas ever since. Definitely the best few days heading for Denver I ever had. LL |

Then both of them tried feeding my Armadillos, and I had to get out and catch another ride. Texas. Phycho women and weird amradillos, but I finally got to Denver, in the winter of '71.

Wouldn't cooking the dillos rule out the chance of getting leprosy?
I personally find them to be quite adorable and almost cry whenever I see roadkill during my frequent trips to Texas.
