Default Raccoon Sloppy Joe

1 young 4-6 lb. raccoon, cut in pieces
1 onion, chopped
1 cup chopped celery
salt & pepper
Water
2 medium onions, chopped
1/2 green pepper, chopped
2 tablespoons butter
1 cup BBQ sauce
1 cup chili sauce
8 hamburger buns


Cook raccoon in water to cover with first onion, celery, and S & P. Simmer until meat is tender. Remove from bones and either cut into very small pieces or put through a grinder. Saute two onions and green pepper in butter until tender but not brown. Add BBQ and chili sauce and serve in toasted hanburger rolls. SERVES: 8
