Default Fricasseed Squirrel

4 squirrels, cut into serving pieces
3/4 teaspoon salt
pepper
1/4 cur flour
4 slices bacon, diced
1/4 cup sliced onion
1/2 cup sliced celery, with leaves
2 teaspoons lemon juice
1/2 teaspoon thyme
1 cup beef bouillon

Rub squirrel pieces with S & P. Roll them in flour. In heavy skillet, fry squirrel with bacon until brown on all sides. Add rest fo ingredients to skillet, cover and simmer for about 1 hr., until all pieces are tender. Serve with hot rice, using broth as sauce. SERVES: 4
