Default Boning out a Venison Saddle


whole saddle

first cut

inside cut

ham free

first cut on rump roast

separating rump roast

rump free

separating top round

top round almost off

top round free

remove shank meat

bottom round & sirloin

bottom round free

first sirloin cut

boning sirloin

last cut

sirloin free

4 roasts.

Cut the rest of the shank meat off and you are done with your ham.

I don't do the whole saddle at a time, I usually cut each shank off separately when it's hanging, mainly because that makes it a LITTLE less hefty for one trip into the house at a time! I ain't getting much STRONGER as I get older!

Other than that, I do about the same, except I usually cut the one nice round roast on each side into about 1" steaks, then cut what's left up onto chunks for "fry" or "stir fry" or "stew" meat.....

What do you do with the "arm" roasts, both front and back? Except for the slow cooker, there's not a lot you can do to it, and I hate to waste it... too stringy to cut up for frying, too time consuming to trim out for jerky, and they gum up my grinder pretty badly.....


Although lately I have been chunking it up and boiling it with a little salt and pepper for the dogs for a chewy treat...they LOVE when I get a deer

I just hope I never get raided and somebody sees all those packages in the freezer labeled "Dog Meat!"

On bigger deer, I will either split the pelvis or go through the ball joint in the field, but for smaller bucks or does this is good enough.

I grind all my trim and the shoulders into burger usually. Sometimes, I will cut up a shoulder into stew meat for use in stew or soup. Sometimes I will leave a shoulder whole and marinate it overnight then grill it whole. With the right marinade (one that tenderizes) it is quite good.
