Dad was born and raised in Hamlin. We went back one summer to visit and stopped at place for supper. He ordered a steak 'rare'. When he said 'rare', he meant RARE'. The 1st one was sent back as it was well done. The 2nd went back cuz it was medium. Growing up with Dad, I understood what rare meant. Being in Texas, I couldn't understand "what is it about 'rare' that you don't get"?

Well, the chef was pretty fed up at this point. So he grabs a steak from the freezer, throws it in the pan fer a minute and flips it. It cooks fer another minute, and was brought to the table. It was still half frozen, but Dad ate every bite.

I too like my steak rare. I like the outside crispy, and the middle to be a shade above warm.

That said, I'mma smokin a meatloaf taday.

1 lb each veal, lamb, burger (cuz they were out of buffalo), and 1-1/2 lb pork sausage.
2 rolls of crushed Ritz crackers
2 eggs
1/2 red pepper, 1/2 green, and 2 jalapenos (all diced fine)
1/2 sweet onion (diced)
Buncha different spices
1/4 cup steak sauce

Mix well and let sit over night in the fridge.

Gonna smoke it over oak lump with pecan chunks. I figure 4 hrs or so should do it.
Serve with mashed taters and gravy, fried okra, biscuits, and sweet tea.

Gotta watch the waist line ya know.

Beautiful Dungey's! I have not haul'd a pot in about 6 months! Its time to hit the Bay's! I 'sopse we could drop pots on the way out when we troll for albacore... Hmmmm. Summer crab are lookin good this year! Thanks for the eye candy! Hahahaha!

While I was up in Wa on vacation, my brother pulled a few pots and pulled up 18 good sized Dungy. We cooked them up for lunch and man were they tasty. I do miss having fresh crab and salmon around, thanks for the pics Don, making me hungry!

I had a friend that grew up there. We were stationed at NAS Cecil Field and we'd drive across state on our time off to go snorkeling for scallops. Those were some fun days. Nothing like fresh scallops and ice cold hard cider.

Rotisserie chicken, steamed carrots, yellow rice, fresh okra from the garden boiled in chicken bouillon & cayenne pepper, iced tea & light bread with a little real butter.

I'm watching my waistline too.

Wow, missed posting here for awhile, and you guys are keeping the pics of bodacious food coming fast and furious. Here are a couple from some recent meals...

Slow roasted pork shoulder with red wine based pan gravy, roasted carrots, potatoes and onion, with fresh picked sweet corn and a salad of cukes, tomatoes and onions. Damn tasty dinner.

mmmmmm looks good! gotta repair my smoker since my rottweiler tackled it but good. last thing i got was a pork roast with seasoned salt and everglades seasoning. do it over hickory for a bout 3 hrs and ....oh yea.

Biggest crappie I ever caught was 18.25", but I never put her on the scale. At the time, I didn't realize that it was most likely a record for that body of water; I was just yung'n'ignant.
