Update:

I took the tongue out an hour ago (from the pot) and put the stock/brine on the stove to simmer. It was 1:00 PM here. At 2 PM, I brought it to a rapid boil, added the meat and turned down to simmer.

I googled for 15-20 minutes on how long to cook a beef tongue and I must say that most folks are idiots. I got responses from 3 hours (no mention of size/weight) to '4 hours, add potatoes and boil another 4 hours'.

Seriously?

I'm thinking 1-1/2 hrs covered and an hour sans lid. 3 lb tongue at a slow roll fer an hour should finish it up nicely.

Some folks shouldn't talk of cooking.

BTW, the smell is... nice.

Whipped up a batch of coleslaw and biscuits. Wild mushroom gravy as a topper. And rice.

The wait begins.

By many 'chef' standards is called Hollywood.

Can you imagine what the 'enlightened' ones would think of offal?
Cept fer caviar and that goose liver 'pate'.

and could not live without it !!!!!!!
They just don't know what it really is.........
and would not believe you if you had the bonified truth
written on stone tablets to show them.
