I am having trouble with the striker staying cocked while I push the bolt forward and down. I replaced the sear and rear breach bolt. Is there any fitting that has to be done to the sear?

did you check the sear spring. It may be broken or crushed. The sear spring is what makes the sear sit high so the striker or cocking piece can catch it. If its week or broken it can drop while cocking. The only fitting you'll need to do is make sure the sear face and striker face are meeting flat and flush.
