Default I love pumpkin pie but...

The other day I chanced in picking up a sweet potato pie, just for grins. MAN, I am in love all over again. Didnt really think anything that looked just like pumpkin could come close to the taste I enjoy so much. Even tho the sweet potato pie doesnt have nearly as much spice like a pumpkin to really escalate the flavor, its sweetness makes up for the difference.

Pumpkin is grown for Jack-O-lanterns, swe-taters are grown to eat. You can fix sweet potatos more ways than Bubba Blue can fix shrimp.

Dice up a sweet potato and toss it in your chili. Anything you can use a pumpkin or squash for can be substituted with a sweet potato and vice versa.

When I do pork chops instead of just onions I like to slice up parsnips and sweet potatoes and cook alongside the chops.

For dessert lovers with a sweet tooth here is a vitamin rich treat.

Sweet potato pudding

2 eggs, separated, room temperature
1/4 cup butter or margarine
1/2 cup firmly packed light brown sugar
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
dash ground ginger
1 cup mashed cooked sweet potatoes

In mixing bowl, beat egg whites until stiff, beat yolks in a separate bowl. Cream together butter and sugar; add well-beaten egg yolks, milk, salt, nutmeg, cinnamon, ginger, and sweet potatoes. Fold in beaten egg whites. Turn mixture into a buttered 1 1/2-quart casserole. Bake at 350° for 40 minutes. Serve with cream or a caramel sauce.

I seem to remember reading that Daniel Boone died after eating a whole bunch of sweet potatoes. Too much of a good thing I guess.

Daniel Boone died of natural causes on September 26, 1820, at Nathan Boone's home on Femme Osage Creek at age 85, just a few weeks short of his 86th birthday. His last words were, "I'm going now. My time has come." His last meal was his favorite food , sweet potatoes so it was a good way to go.

My grandpa did the same thing, said it was his time, went fishing that day, his favorite activity, came home, had a good supper and died in his sleep. I hope I can do the same.

If you like "sweet taters or punkins", you should try a cushaw!
It's sometimes called the "sweet potato pumpkin"
If you have eaten canned pumpkin, you have probably eaten cushaw.
They love the heat, mature early and are really easy to grow and they keep really well. I have grown them as large as 35 pounds.
