Thumbs up Potato Bombs

I put this in the Dinner thread, but thought I should give it its own thread for the search engines.

POTATO BOMBS!!!! Here's how to do them.

Core russet baking taters with an apple coring tool. Cut the plugs into thirds and save end plugs.



Make a filling for the holes. For this batch I used ham, cooked salami, mozzarella & sharp cheddar cheeses, but you can use various lunch meats, sausages, hot dogs and any number of different cheeses.



Plug the holes to hold the filling in while baking.



Wrap the potato with a whole strip of bacon.



Wrap in aluminum foil and bake for 1 hour 15 minutes at 375F.



A thing of beauty when fully cooked.



Cut lengthwise and apply your favorite topping(s). I used ranch dressing and Sweet Baby Ray's BBQ sauce.

Anything wrapped in bacon gets my attention.
Oh yeah this looks good.

Maybe cooked together with a few chicken livers wrapped in bacon...which I haven't had in a few years.....yum.

hmmm, got me thinking! Add a nice slice of jalapeno pepper to the stuffing and then smoke them on the smoker for about 30-45 minutes before wrapping them to finish off the cooking.... I love this idea of yours. I never even thought of doing something like this!

Beth, the plugs are the potato core you remove. Remove the core and cut core into 3rds. Toss the middle one, or make it into a very dense tater tot. use the 2 ends and shove them back into the tater after filling with filling.
