last year i saw a article about the haul a couple local boats got so went for a dive and got 6 in 3 mins , there was 2 kilo ( 4 1/2 lb ) of shelled cooked meat just in the legs !!

a private person can take 6 a day from shore, 20 in a boat with traps

6 is plenty for me and its one type of shellfish you can freeze ..

There is only one way to do crabs... steam them! Boiling takes half the flavor out of them. I get my steamer out and use a mixture of Water, beer, and just a touch of white vinegar. Once the steamer is putting out good steam, I place the crabs in with a health dose of Old Bay Seasoning all over them. You'll never boil another crab after doing them this way....

Hmmm...

Never seen a crab ya could buy that wasn't already cooked. Local market maybe, but how do ya keep it from going ballistic in the steamer and tearing the thing apart?

steamer? i have a boiler out of a hot water heater about 15 gallons of water 1/2 pound butchers salt and toss em in they dont go far ...

For Alaskan King Crab I do not add the Old Bay Seasoning, King Crab doesn't need anything to enhance its flavor.

If your King Crab is already thawed and pre-cooked ( if it is reddish color it is pre-cooked, and most are ) I steam for 5-6 minutes. If it is frozen, I steam for 12-15 minutes.

For Blue Crabs, Stone Crabs, Dungeness, etc., I always use the Old Bay.

For live crabs I keep them iced until ready to steam. The ice slows them down, almost like they are asleep, and once that steam hits them they don't do much thrashing at all.

My whole family are big seafood eaters and we have a saying about crabs: If it ain't screaming it ain't steaming!

I order live crabs from one of many Maryland crab suppliers, flown in overnight and still kicking when they get here! Do a Google search for 'Live Maryland Crabs' you find lots of places.

Here is my recipe for Maryland Style Crab Cakes:

2 slices white bread, crusts removed and crumbled

2 tablespoons mayonnaise

2 teaspoons Old Bay Seasoning

2 teaspoons Parsley flakes

1/2 teaspoon prepared yellow mustard

1 egg, beaten

1 pound lump backfin crab meat


1. Mix bread, mayonnaise, Old Bay, parsley, mustard and egg in large bowl until well blended. Gently stir in crabmeat. Shape into 4 patties.

2. Broil 10 minutes without turning or fry until golden brown on both sides. Sprinkle with additional Old Bay, if desired.

Makes 4 servings.

If you really want a treat.. here is my recipe for Maryland Eastern Shore Crab Soup:

1/4 cup onion ( chopped)
2 stalks celery (chopped)
1 clove garlic (minced)
2 tablespoon olive oil
1 tablespoon Old Bay seasoning (add more or less to taste)
1/2 teaspoon lemon pepper
1 tablespoon Worcestershire sauce
1 quart chicken broth
3 cups water
2 cups red potatoes (cubed)
1/2 cup frozen lima beans
1 cup frozen green beans
1/2 cup frozen corn
28 ounces canned tomatoes with juices
1 bay leaf
1 pound backfin crab meat


In a large soup pot, saute onions, garlic and celery in olive oil over medium heat for 5 minute. Add Old Bay, lemon pepper and Worcestershire sauce. Stir until vegetables are coated with spices. Add all other ingredients except crab.

Simmer over medium heat for 50 minutes or until potatoes are soft. While it's cooking pick through crab meat to be sure all shells are removed. Stir in crab meat. Simmer 10 minutes.

I only added a little salt with a six minute boil. As usual they were delicious. I didn't want to add alot of herbs and spices to interfere with the actual taste of the crabs.
