Does anybody else on the forum eat pig skins? Being a diabetic I can't have any sugar in my food, and carbohydrates are also a no-no! Pig skins have neither. I think I'm getting addicted to these!

The puffy ones you find in most stores, I just can't eat! I get chocked on them too easy. I like these, they are real hard. You can easlily hear me crunching them from across a room!

The ones you get in the bag are ok, but the best look like this and the texture is like a combo of crispy and squishy bacon. If you ever get a chance to have these the bag kind just won't cut it anymore.

Used to love them, but not anymore. Too much salt. The ones at the fair are great. They brine them, smoke them, BBQ them with spicy sauce and then deep-fat fry them.

Man I love the home made cracklins! You just can't find them anywhere. The idea of hitting some of the Mexican markets has not occured to me, but I will be taking a lot closer look at them as a source.
