I just use a small pocket knife, but now I've gotten a Mora that I'm pretty sure I'm going to use for everything. But, the small Rapala fillet knives with the wooden handle work awesome for just about anything.

This Old Timer Sharpfinger
is very universal.
It is also inexpensive and sharp.

The Case folder is only used for trout,[me]
but is also a good choice.

+1 on the Old Timer Sharpfinger. It's the only field knife I've ever needed. The lady of the house, on the other hand, prefers her Wyoming Knife.

Another Old Timer Sharp Finger user, it also works great on large game. I know a guy up north of me that I would like to try it out on.

I like these two a lot, the folder is a Remington upland knife, the other is a cold steel canadian belt knife. ( the canadian belt knife is ultra light, but could be used for deer and other large animals). I really like the feel of the knife in hand. The remington knife has a choke tube tool and a gut hook.

good luck
