I was getting started processing a couple more wild hogs the other day when my uncle called, he was headed out for the last day of dear season and he says "keep them hogs on ice and maybe I'll get a deer, we'll mix the meat and make some links" which sounded like a winner to me 'cause I love me some links, and my freezer has none in it! Anyway the dude comes back with a real good size deer and another freeking hog.
Needless to say, our evenings have been spent slicing and dicing...We plan to start "stuffing" the links tomorrow night. I estimate 150 pounds of links. We have a good friend who runs a BBQ place, who will toss 'em in and smoke them for us and never lets us pay him a dime. Pass the crackers please?
