Default Fish anyone?

I went surf fishing last weekend and caught a bunch of whiting.

We filleted them and brought them home.

In a large baking dish, I melted two tbl spoons of butter.
I layered the fish fillets over the buter.
Then gave them a good sprikle of Uncle Tony Chacher's Creole seasoning.
Broiled them for about 12 minutes.


Outstanding!!!


Even the warden, my lovely wife, liked it and she never likes any wild game or fish I bring home.

Now that's the kind of recipe I like.... simple. Sounds delicious!

Of course, the key was the fresh fish.

CORRECT...

We buy frozen whiting frequently. This tasted So MUCH Different.

Maybe now she'll give venison a try...

My favorite fish is Carp.
When I was kid I got the recipe from and older black gentleman.
Scale and clean the carp with head a top fins attached.
Salt and pepper to taste.
In the cavity of the carp place sliced up oranges, apples, pears, potatoes and two minced cloves of garlic.
Get a piece of 1"X6"X24" hickory wood. It must be solid wood not a venier.
Place the carp on the wood and bake at 325 degrees for 45 minutes.
When the fish is done throw it away and eat the hickory. Serve with wild rice.

I have a similar recipie for Redfish or Drum.

Melt 2 sticks of butter in a small saucepan, add garlic powder (NOT GARLIC SALT), 1 teaspoon of Soy Sauce and bring to a gentle boil. Lay the fillets in a pan and pour the mixture over them. Place the pan in the refrigerator for 1 hour.
Heat the coals in a BBQ pit and clean the grill. Coat the grill with a towel soaked in olive oil or do like I do and use a grill rack that clamps closed on the fillets. Remove the fillets from the marinade and put them on the grill cook one side for 10 minutes then turn only one time and finish for another 10 minutes. If you are going to use the marinade, It must be brought to a boil in a saucepan for at least 5 minutes then baste both sides librally. When done serve over a bed of wild rice........mmmmmm good.

Adjust your cooking times for the thickness of the fillets.

Please clarify; The recipie sounds great and I'm going to try it on stripper and spotted bass.
The olive oil rag is just used to wipe down the rack correct? Or are you wrapping the fish in it to steam them?

I dunno where Tex45 done run off to Bill, But if I may, I'm certain he was mentioning using the towel soaked with oil to coat the grill only, because he also mentions using wire grill rack as an exception to the oil in order to keep the fish from sticking.
