. I hate to break this to you two but no that is not Elk, That is just Beef. yes Elk is better but I didn't have any Elk Sirloin sliced for jerky at this time,will later. I will be making some Elk up later and yes you are both on the list to receive some of it when it comes out of the smoker. The temperatures around here have been at a level to make it difficult to use the smoker as the meat has to get to 155 Degrees before I will allow it to be used.I also like to use Moose Sirloin for the jerky but don't get it very often. Glad you both enjoyed the surprise. Pistol your surprise will be in a little later.
