Well thanks for the compliments guys.
I wasn't worried about Donny's reaction to the temperature but I didn't know if you liked spicy foods or not. Should have known it wasn't a problem . I hate to break this to you two but no that is not Elk, That is just Beef. yes Elk is better but I didn't have any Elk Sirloin sliced for jerky at this time,will later. I will be making some Elk up later and yes you are both on the list to receive some of it when it comes out of the smoker. The temperatures around here have been at a level to make it difficult to use the smoker as the meat has to get to 155 Degrees before I will allow it to be used.I also like to use Moose Sirloin for the jerky but don't get it very often. Glad you both enjoyed the surprise. Pistol your surprise will be in a little later. catfish

I would have never guessed that it was beef, I think you'll agree that mine and yours are worlds apart in terms of taste and both were beef. Thanks again, Bob...I'll be thanking you with each bite for quite awhile. ![]()

Maybe worlds apart as you stated, but the day I harvested the five by four buck this year I was munching on some great jerky that I received from Texas
. Thanks again for it. I will send the Elk Jerky as soon as I get off my butt and slice the package for jerky meat. Later catfish
