Default Southern Country Boy Casserole

Southern Country Boy Casserole

This is a bit different and it is one of my own.
Chop two large onions
Chop one bell pepper
Chop two or three hot peppers (Optional but I like them in there)
Three cups mixed or gumbo (I like the gumbo) vegetables
Put all of this in a bowl and set aside
Take three or four pounds of Smoke Pork Neck and boil for about two hours
Or until the meat is falling from the bone
Remove the meat from the pot BUT SAVE THE WATER
Remove all the meat from the bones, (toss bones away only after gnawing them)
Place meat in the bowl with other ingredients
Now cook four cups of brown rice and everything in the bowl all mixed in with the broth in the pot some water may have to be added. (Remember that it is 2& ½ cups of water to one cup of brown rice)
When the rice is done, about 45 minutes, place everything into a large casserole dish add ½ cup sharp cheese and cook 20 minutes in a preheated 350 degree oven.
Now eat till your tummy pops.
