Default Elk Summer Sausage

Hi all, Just thought I would jump in here and show one of the ways we use the Elk meat we get. This is Elk Summer Sausage in the making up to the finished product. Now if I can just get them in order. The first one should be the 20+ pounds with the seasoning just added, the second is when we are putting the meat into the sausage links, the third is the sausage as I put it in the smoker. The last is just plain old goooood . The better half is holding the sausage for us to see and I will be holding it to eat with some cheese and maybe crackers. Probably just cheese. Hope you enjoy and Al eat your heart out, or better yet come on up and I will share some with you. Gotta feel kind of sorry for these wire stringers you know. Don't know if I made enough for all the puppies though so Al you may be out of luck. Heck I like dogs. catfish

Nice! Gota try and find my gramp's recipe..I'm afraid it got thrown out last year when cleaning the table last season!
