Default Maine Bear Steak

2 lbs. bear steak
1 teaspoon paprika
1 teaspoon dry mustard
2 tablespoons steak sauce
fresh ground pepper
2 tablespoons butter

One hr before frying, sprinkle bear steak on both sides with paprika, dry mustard, steak sauce and pepper. Turn once during marinating. Fry bear steak very fast in hot iron skillet in butter. Meat should be crispy brown on outside, slightly rare in center. SERVES: 4

Note: This reciipe is for young bear that has been feeding on something other than garbage or flesh.
