Breakfast Casserole
2 lbs pan sausage, broken up, cooked & drained frozen hash brown squares.....enough to cover the bottom of the dish you are using eggs.....1 dozen for a 13x9" dish or 6 to 8 for a 9" square dish milk.....3 T for 1dozen eggs 2 cups Colby jack cheese, grated Heat oven to 350°. Spray the dish with nonstick spray; cover the bottom of dish with hash browns in a single layer; spread cooked sausage over the hash browns; place in oven while preparing eggs. Slightly beat the eggs and milk; then scramble, but only half cook them, leaving eggs really wet. Spread eggs over the sausage; top with grated cheese. Cover with foil; bake until dish is hot; about 15 to 20 minutes. Cut into squares and serve with toast. Crpdeth

Ever try it with corned beef hash in place of sausage and hash browns?
And a splash of malinda's habanero sauce. |

Dang it Donny, now I have to make up some extra Sausage just so I can try that recipe. Sounds great. Will try it first the way you wrote it then maybe with some Korean Red Pepper just for fun.
Thanks catfish

Never had corned beef... I was standing in the store the other day and thought of Ron for some reason when I saw some, almost picked it up, but said "naaa" and grabbed tuna instead.
Malinda's huh? Never heard of it, ATM I am working on Da Bomb habanero sauce which is freaking crazy hot and some Yucatan hab sauce which is pretty mild. Shocked, stunned and amazed, Never did corned beef hash? And i don't mean corned beef and cabbage (although i cook it up once a month), you would call it a chuck wagon breakfast. Seared and roasted corned beef, pulled. And lightly boiled or roasted potatoes cubed, Lightly browned in bacon fat or butter with you're choice of spices. corning beef is curing it in a salt brine, specifically the brisket. Malinda's is a few degrees hotter then the Yucatan, and more flavor, less vinegar
