Default Candied peppers

Candied Jalapeños

1/2 cup vinegar

1/2 cup water

6-8 cups sugar

6 pounds fresh sliced jalapeño peppers

some folks add diced onions to the recipe (not me i prefer purity)

1.slice the jalapeños (i would suggest using latex gloves fer the prep
work in case you get to scratching or rubbing , uh, your eye (personal experience)

2.put peppers in pan of boiling water and vinegar and simmer
bout 2-3 minutes they say not to breathe the fumes but i do
tho it did chase the missus out of the house.

3.pour off most of the water/vinegar, add the sugar.

4.bring to soft candy temperature to completely dissolve the sugar
approximately 10-12 minutes

5.ladle the elixir into jars bout 1/4 inch from the top.

6.screw on caps

7.hot bath fer 5 minutes

8. your done ! eat em right out of the jar or mix em with cream
cheese on crackers

Hey, Donny, with candied peppers you could a make a fruit cake for Xmas that would knock their socks off! I'd use habaneros were I you, or maybe some nice scotch bonnets.

Hey, thanks for posting that here, Ron... I think Rusty and I would get along real well.

I am definitely going to give it a try, soon!

Ya know, Rich...I may just do that. The habanero works real well in anything that I want people to LEAVE ALONE anyway.

I've never knowingly had a Scotch Bonnet, Rich... I dont know why they fill the stores up with habanero, but no bonnets?

I don't see any Bhut Jolokia (Ghost pepper) either... Liability perhaps?

Jeeze! I'm getting hungry!!!!
