how hard is it 2 switch the barrels on the gun? is all i have 2 do is switch the barrels or is other mods needed?

It is not common to have a switch barreled M700. Normally an action and barrel wrench are used to accomplish this as they are quite tightly assembled. Also a set of head space guages are required, to adjust the distance from the bolt face to the point of head space for a particular catridge. That being said however, I think I remember reading about a system being built for these rifles that will allow this to be much more easily done, involving a barrel nut, as is used in the Savage 110 series of rifles. Maybe some one will read this that knows more than I, and can send you in the right direction for this set up. But normally this is not being done by the owner, but by a gunsmith.
