These are the best ginger cookies I have found, I put a little extra spice in them too!
![]() Soft Ginger Cookies 3/4c. butter 1c. sugar 1/4c. molasses 1 egg 1 tsp. baking powder 1 tsp. ground cinnamon 2 tsp. ground ginger 1/2 tsp. ground cloves 2 1/4c. flour Preheat oven to 350F. Cream butter and sugar together, then mix in molasses, egg, baking powder and spices; mix well. Add flour and mix well. Roll in your hand, then roll in sugar, then bake 10-15 minutes. * * * * Ten minutes of baking time is not enough in my oven, they are still pretty undercooked, but approximately 14 minutes will yield a cookie that is crispy on the outside and soft inside! I leave the cookies round, they flatten out some when they bake. Recipe will make a couple of cookie sheets full of 2" round cookies, I didn't count! LOL!
