Default My Mama's Mayonnaise Cake

2C Flour
1C Sugar
1tsp Salt
1tsp Soda
1tsp Powder
5Tbl Cocoa
1tsp Vanilla
1C Water
1C Mayo*

Heat oven to 350dF

Grease & flour skillet or two 8x10 cake pans, set aside.
Mix first 6 ingredients in large bowl. Add water & vanilla mixing well.
Stir in mayo and mix until smooth.

Pour into skillet or pans and bake 30-35 min. or until toothpick comes out clean.

*Do NOT use Miracle Whip. MW = Even the dog won't eat it!

I like mine from a skillet and baked a bit longer so a crustiness forms on the outside. Then I put a big warm hunk in a bowl with cold milk over it. It can be garnished with powdered sugar too...

It is...the mayo takes the place of the eggs and gives it a creamy kinda flavor.
