Is it built anything like an off set smoker?
I cook until I reach an internal temperature of 180 degrees, this last one cooked for nine hours. Welcome to TFF! ![]() Crpdeth

May I suggest a Taylor Digital cooking thermometer. You put the probe in the breast or thigh and leave it during the entire cooking time. That way there is no guesswork in knowing when it is done.

350 deg till 180 deg inside.
Dry pan, and mild wood. Apple, cherry, alderwood, pecan... Most birds are 'injected' with a brine solution. If not, soak your own in a mixture of salt, sugar, and seasonings to your choice. Smoke 'em if ya got 'em! ![]()

Bob has it right. Do not try to slow cook Poultry (not healthy). Don't worry you'll get plenty of smoke flavor.

I agree with this, at a minimum you should have a hotter cook chamber at the beginning of the cook. I've had people argue that 250 is fine for the duration... That they've been smoking birds like this forever, but I give away a lot of my finished product and I'm not taking chances with other peoples health.
