Looks like really lean stuff. Was it dry or tough?

a bit dry actually but thats me , your supposed to reduce cooking times by 10-20% using the bag ( first time i used one) so it came out normal for roast
( i've read the instructions now ) i normally cook em in some of their own lard , helps stop em getting dry , but its very rich then .. so trying other ways , i'll thaw the other peices later in the week and try that with 20 mins off the cook time and some dripping tossed into the bag before its closed .. the full ( both breast ) breast is 14 lb i've cut it into 8 now i'm 55 the Koori folks have added me to the elder list and so when they hunt emu i'm given some good for joints and such , very good ! Emu is good eating. Jack, your meat will be more tender or easier to chew if you slice it against the grain. I don't intend to sound bossy, but maybe you know that already.
Looks like a tasty meal. ![]() For me and the wifey, chicken breasts with Cavender's Greek seasoning, with fresh carrots and broccoli steamed with a dash of salt.

Ribeye steak, sour dough bread toasted with sliced parmesion cheese and roasted garlic (roasted in olive oil and seasoning), and a glass of milk. Mmmmm, mmm, good. I cooked tonight and the wifey loved it.

We (kids, and dad) got three moose last Sept so we've been eating moose over caribou. Fryed up some breaded T loin sliced thin in olive oil. I'm not real exotic, just meat & tatoes guy. Wife had candied carrots & baked yukon golds from last summer's garden.

Been slow cooking up a mean concoction of pintos, peppers and spices to make re-fried beans tonight, spicy stuff!!! Will cook up some chicken and beef fajita meat, home-brew salsa, throw in some sour cream, then go on over and slap my momma.

Chicken casserole. Chicken (2 packs chicken breasts), pasta noodles (Ronzoni, 2 boxes), cream of chicken soup (2 large cans), and chedder cheese on top(slices work best). Take cooked noodles and chicken, stir in soup amd place in pan. Put 2 laters of cheese on top. I mix a lot of pepper into my casserole. Place in oven on 325 degrees for 30 min. Switch nven to broil until cheese begins browning. The ingredients don't have to be exact. My wife loves it and kids usually ask for seconds and it's cheap.
