Steelhead was 3.99/lb yesterday so I picked up 5 lbs.
Brined all night and on the smoker in about an hour. When it gets pulled, 4 lbs of pork country ribs will take its place. Shooter was kind enough to send me a sample of his renowned rub, so the ribs got rubbed last night. No joke. I told my son to get the mail last weekend. He brings in a packet (one of those self seal bubble wrap lined jobbies), and I could smell it already! And the rub was in a baggy to boot. ![]() While the pork is smoking, I'll whip up a batch of slaw fer the sammies.

Recovering from a week of night shifts last week, I'm on early shift this week. Sort of calculated jet lag.
![]() Last week was "summer" hereabouts; temps in 70's with cloudless skies. This week it's back to normal, 40's-50's, overcast with fine rain. ![]() We had a pistol caliber rifle competition last weekend, 90 rounds in about 3 minutes' shooting time; I came in dead last. My excuse: it was sleep deprivation. ![]() Still doing OK otherwise--upright, heart beating, breathing, able to communicate...Community Council meeting tonight. What's for dinner tonight? Whatever I can scrounge up and eat quickly...probably a nukeable chicken and bacon pasta bake. |

Mea culpa, mea culpa. I've been absent from here since last August (sometimes life gets in the way), so I figure I'd better make my return in style, so here it goes...POTATO BOMBS!!!! Here's how to do them.
Core russet baking taters with an apple coring tool. Cut the plugs into thirds and save end plugs. ![]() Make a filling for the holes. For this batch I used ham, cooked salami, mozzarella & sharp cheddar cheeses, but you can use various lunch meats, sausages, hot dogs and any number of different cheeses. ![]() Plug the holes to hold the filling in while baking. ![]() Wrap the potato with a whole strip of bacon. ![]() Wrap in aluminum foil and bake for 1 hour 15 minutes at 375F. ![]() A thing of beauty when fully cooked. ![]() Cut lengthwise and apply your favorite topping(s). I used ranch dressing and Sweet Baby Ray's BBQ sauce. ![]() |

ok need some other idea's for dinner? Oh on the food network one of the chef's put olive loaf into processor rolled in a ball don't know if she used flour or bread crumbs and deep fried it the judges went nuts said it was outrageous

We had my homemade 4-cheese whole wheat ravioli with homemade marinara sauce. A salad with all the trimmings rounded out the meal. We love those puffy pillows of goodness, and teh whole wheat pasta makes it almost healthy.

I also have kept up my bread baking hobby, and have added sandwich thins to the repertoire. These are sold in the stores and claim to only be 100 calories, so they are a hit with people who want to limit their caloric and carb intakes. Shown here are the honey whole wheat variety, but I make them with my white, Italian & rye recipes as well. If you make these you'll never go back to the store bought ones that taste like cardboard.
![]() If you already bake bread, these are simple to make. I take a 2-loaf recipe and split the dough in half(ish). I them cut off 2.3 oz of dough and shape in a ball to rest. When they are all shaped (1/2 loaf makes 12 thins) roll them into discs about 5" and let rest for a few minutes. Then I like to "dock" them like they do with pizza dough so they don't rise too high. Put on a parchment covered sheet pan, cover with a towel and rest for 30 minutes while you preheat your oven to 400F. Uncover them, give them an egg wash, then sprinkle some rolled oats on top. Use regular or instant oats. Pop in the oven for 13 minutes and they're done. Allow to cool, cut them horizontally in half, bag them and freeze. OMG, this turned out so good that I had to share it here. Diced Russet taters, hard cooked eggs, diced celery, grated carrot, celery seed, Hellman's mayo, sour cream, sweet pickle relish, salt, fresh ground pepper, topped with sliced eggs, parsley and Spanish paprika. As with most salads, no measuring, just go by feel and taste.

So the fish thread got me hungry for some fried fish so Saturday I removed some crappie from the deep freeze and fried it up.
The crappie were first dusted in flour that I seasoned with black pepper, onion powder, and cayenne pepper. Then they hit the egg/milk wash and finally I coated them in instant mashed tater flakes.
