Me and the Mrs. split a grilled strip steak, and each had a baked potato with butter & sour cream and steamed veggies. Pretty tasty.

This is Emu , sorry it took so long

the tribal folks who get this are permitted and so i gotta wait on them

this is thigh muscle ( above the drumstick) it was a 4lb roast

trim the sinewy ends off , it looks like your wasting a lot of meat but trust me you wont chew through emu sinews ...

the roast ends up a bit stubby but its all wonderful

i slow cooked it for 3 hours after giving it a mustard and herb rub

its very thick and stringy like a oversized turkey but very tasty

i cook it until its falling apart ( actually i did this a bit too much and was able to slice it for a bit , oh well , next time )

the meat is a bit oily if underdone , emu oil being the only reported working relief agent for many forms of arthritis

its long time been " old fella tucker" or meat reserved for the elderly , for its anti inflammatory properties

A few weeks ago they had chicken leg quarters on sale so I bought a big old bag and threw some on the grill to bbq. I had plenty of coals left, and plenty of suds, so I figured I’d just grill the remaining 7 leg quarters without any sauce and figure out what to do with them later.

I seasoned the leg quarters with pepper, onion powder, garlic powder, and sage. Once the second batch was done I let them cool down and covered them with foil and placed them in the fridge.

Next day it hit me; chicken salad. So I started by removing the skin and set that aside for later. Then I removed the meat from the bones and chopped that up, next diced some onion, celery, and green peppers up and threw that in with the chopped up chicken, then added mayo and mixed it up until I liked the consistency of it and threw it back in the fridge to chill.

Served it on pita bread with lettuce and sliced tomato. I also took the removed chicken skin and fried those up in oil until nice and crispy and added that to the plate. Best chicken salad sammich I’ve had in a long while.

Halupki, Good Hunkie food. Wife comes from long line of Poles that claim to be of Hungarian blood; but I know better. Stuffed Cabbage with tomatoes, sauer craut, and gravy over mashed tatoes; good stuff.

Last night I used fresh okra from the garden to make okra & tomatos to go with grilled chicken thighs and breasts (Grillmates Mesquite Marinade), purple hull peas, cornbread & iced tea.

Venison tenderloin, asparagus, sauteed mushrooms, venison liver & corn last fall.

Last night, my wife fried some Frog Legs, cubed boneless Pork Chops and some Korean style Egg Rolls with a side of boiled Green Beans and taters. The frog legs and pork was fried in an oriental style bread crumb batter. Yum - Yum
