Mexican casserole

    Ingredients
    1 pound lean ground beef/deer/hog sausage/you get the picture :D
    2 cups salsa
    1 (16 ounce) can chili beans, drained
    3 cups crushed tortilla chips
    2 cups sour cream
    1 (2 ounce) can sliced black olives, drained
    1/2 cup chopped green onion
    1/2 cup chopped fresh tomato
    2 cups shredded Cheddar cheese
    1 large can of Cream of Mushroom soup
    1 diced onion
    Directions

    1 Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 baking dish with cooking spray.
    2 In a large skillet over medium-high heat, cook ground beef and onion until beef is no longer pink.
    Stir in salsa, reduce heat and simmer 20 minutes, or until liquid is absorbed.
    Stir in beans, soup and heat through.
    3 Cover bottom of prepared pan with crushed tortilla chips, or flower tortillas. Spread beef mixture over chips.
    Spread sour cream over meat mixture. Layer olives, green onion and tomato over the sour cream.
    Sprinkle shredded cheddar over all.
    4 Bake in preheated oven 30 minutes, until hot and bubbly.

    The original recipe calls for olives here, but I dun like 'em and I'm grown, so I dont have to put 'em in! :D

    I love this forum! There's no telling how many times my computer has crashed, causing me to lose recipes... How many times I've lost paper recipes, etc, but here I am five years after making this post looking back on it and stirring up this concoction once again.

    *Adds habanero chile powder to the ingredients*

    You guys need to try this one... It's been a favorite for over ten years now! :)

    Mexican casserole with chips and salsa tonight! :D

    I'll try this on Saturday with some venison I have. It sure sounds good.

    Sounds a lot like a the Taco Beef Kidney Bean Casserole I often make. Also, I'd use my favorite taco seasoning for this recipe, too.

    Taco Seasoning
    Ingredients:

    2 tablespoons chili powder
    1 tablespoon ground cumin
    2 teaspoons cornstarch
    2 teaspoons kosher salt
    1 1/2 teaspoons hot smoked paprika
    1 teaspoon ground coriander
    1/2 teaspoon cayenne pepper

    Directions
    Put all of the ingredients in a small jar and shake to combine. Store in an airtight container for up to 1 month.
