    What is a mud bug?
  3. A mud bug is a crawfish, 6xl. Along the Gulf Coast they are considered a delicacy, especially in Louisiana. Sometimes they are eaten live. Bite off their heads and suck down the juice.

They say nothing is more intense than a Cajun trying to catch the last mud bug of the season! :D ;)

    Ron, you're making me hungry! ;) :D

Dang it Ron, I read the title and my mouth started watering instantly. We usually put on a Crawfish boil a few times a year and pick up a couple hundred dollars worth of bugs and spices.

Red taters, 1/4 roasting ears, ect.. Good god man I'm getting hungry! We used to make it so hot you couldn't believe it, but some of the kiddo's have started attending and the hens started squawking about "toneing it down some"...*sigh* I suppose they are right, but maybe next time we'll get two kettles going, one for the men and another for the women, kids, and that wuss of a brother-in-law who should have stayed home and watched figure skating.

  11. Right, Cat. Nothing like a little mildewed cabbage and hot peppers to give it just the right zing. Even the maggots gag a hundred yards away! ;) :p

Topped with some local greens and white rice......

provided by some swell ARVN fellows who were also on bridge guard with us,

that bridge was over the Perfume River, right across from the Citadel in Hue,

a few days before the 68 "Tet Offensive" started....

My favorite is etoufee! My son is very allergic to sea shell fish, can't touch lobsters, but crawdads don't cause any problems!

I like em spicy too, but I can't do the guts!

I think crawdads are better than lobster!
