The thermocouple should screw into the gas valve and allow it to keep the gas valve open as long as it has a flame. If the flame goes out the gas valve should shut.
What brand of heater is it? Is it one of those that takes a small bottle of propane called something like my buddy or is it a larger one that connects to a 20lb or larger bottle?

Wtg you!! Is this one of those tall heaters for a patio? I was thinking a square heater about 3 feet high and 20 inches wide with ceramic grates, Or one of those single or double eyed heaters that attach directly to the bottle. I tote one of those when I go fishing and actually have it built on to my cart I made that holds tackle rods chairs a minnow cooler my net and the heater so I make one trip to the end of the lake to the dam with no effort. I made this cart between my first and second shoulder surgery last winter.

Most propane dealers around here carry or can order thermocouples. They're all mostly universal except for the length.
