Scallops in Jalapeno Cream Sauce

    Last night I whipped up a dish that made me glad I can cook.

    Jalapeno Cream Sauce

    1 Cup Chicken Broth
    1/2 Cup Cream
    1 T Shallots
    1 T Garlic
    2 T Red, Yellow or Green Pepper
    1 Jalapeno
    1 t butter
    1 t Cornstarch
    1/3 Cup water

    Saute' onion, jalapeno & bell pepper in butter until clear. Add garlic & saute for 1 min. Add chicken broth and reduce by half. Add cream and continue to reduce. If you need a thickener mix the cornstarch with cold water and add it to the sauce.

    Scallops


    Sprinkle both side with the cajun seasoning of your choice. Sear both sides in a pan in butter about 1 minute each side. Cover and reduce flame to medium low. Cook3 minutes.

    Presentation

    Place the pasta of your choice on a plate, arrange scallops and sauce the pasta and scallops. May garnish with cilantro, parsley, chives or jalapenos!

    Texas isn't that far away from Alabama to travel for a meal like that. We'll be there tomorrow, about 70 of us from the forum. OK?

    Come on, but bring your own scallops, I got plenty of Jalapenos! :D

    Oh, that so hurts. I'm so allergic to shellfish I could die but still eat them a few times a year nonetheless.

    Crpdeth, your not allowed to leave for the meal until the rest of us are within 60 miles of 45nut's house. Rules are rules and everybody has to stick to them.

    First in first out. When I make a batch of this, I'm eating first and all y'all can have the leftovers! :D Guess what I'm making for supper tonight??????? :eek: :D

    It will be ready about 6:30. Y'all come on.

    This recipe sounds great! I'm not too sure about the Jalepenos, too much spice or heat kind of does it in for me. But the rest of it sounds like a keeper!
