I'm just curious as to what animals are considered open season game. Not just in MO, but in most states.

Wild pigs, and all the usual roadkill varmints. You're state game dept. should have a list. Ours does, with some restrictions. http://www.mdwfp.com/media/75616/le-6_3779_nuisance_animals.pdf

By "open season", do you mean "no closed season"? If so, as blind bud said, pigs in Florida, along with Cottontail rabbits.

Here its coyotes and cottontails. But if I catch anyone shootin the 2 or 3 that we have I might just run em over. They got wiped out a few years ago and are finally startin to make a comeback.

Here in Ohio, there is NO CLOSED season on coyotes and wild boar.
No closed season and no bag limit, 24/7.
