Don't call me a vegan/vegitarian woosie boy. Had a couple of zucchinis from my brother, so tonight was Veggie Burgers, salad and corn-on-the-cob. If you never had one, it's B.S. from the grazing crowd that say it tastes just like a burger. Baloney! It tastes like ground up veggies. it's not bad, but now I'm Jonesing for a baloney samich.
1# Hillshire Polska kielbasa, onions, mixed peppers, broccoli and new potatoes. This is a one-pan meal. Literally, you cut everything up, throw it in the pan and simmer it for 20 minutes with the cover on the pan. No oil or liquid is needed, as the fat from the sausage and moisture in the veggies provide all the necessary liquid. Stir once or twice and plate it. Bread & butter with a tossed salad finishes the meal.
Me and DW agreed that pancakes would be a great dinner. Sooooo, I kicked it up a notch and made roll-ups filled with raspberry preserves and cottage cheese, then topped with sour cream. For the doubters, this is a GREAT combination. Oh, I also added 1 tsp. each of vanilla & orange extracts in the batter. It was da bomb!
Am I the only one cooking around here??? I feel like I'm being boycotted. We had a widow friend over for dinner, so I made my 4-cheese & spinach whole wheat raviolis, a small loaf of bread from pizza dough, and DW made her killer salad. The girls had cookies for dessert, and I'm holding out for Moose Tracks later on. Urp!
The fajitas look delicious, and I'm a sucker for grilled veggies as well. Nice job of plating the meal. We eat first with our eyes, so appearance is as important as flavor. Can you explain the peach french toast?? Are the peaches added after grilling the bread? I'm lost (The wife will attest to that).

1 cup packed brown sugar
½ cup butter(I use unsalted)
2 tablespoons water
1 large can sliced peaches, drained
1 tablespoon vanilla extract
5 eggs
1 ½ cups milk
1 loaf French bread sliced
Cinnamon to taste
Melt the butter, brown sugar, and water over medium high heat and let come to a boil, reduce the heat to low and cook for 10 minutes stirring frequently. Pour in the bottom of a greased 13x9 baking dish. Drain the peaches and place in the butter/brown sugar mixture. Place the sliced bread over that.
Beat the milk, eggs, and vanilla mixture and slowly pour over the bread making sure to coat each slice of bread.
If you are making this the same day pre-heat your oven to 350 and sprinkle cinnamon over the bread to taste, cover with aluminum foil and bake for 20 minutes, remove cover and bake for an additional 25-30 minutes or until the bread is a nice golden brown.
If you are making this the next day save the cinnamon until you are ready to bake and cover with foil and place in the fridge. Next morning sprinkle the cinnamon on top of the bread to your taste ( I like cinnamon) and bake covered for 20 minutes and then remove the foil and bake another 25-30 minutes.
When serving you can either spoon the butter and brown sugar mixture from the bottom over the bread or top it with syrup or both.
Thanks, Roadkil. Now I get it. Couldn't tell the peaches were under the bread. I'm gonna give that a try the next time the kids are visiting us for an overnight.
Made this Sunday. Grilled Italian sausages with grilled green, red, yellow, orange peppers and red onions that got chopped up and topped with pepper jack cheese. Homemade coleslaw and baked beans.
