Whats for dinner???

    I'm not even Italian, but you would think I was based on my recent cooking...like tonight. Penne pasta, meatballs, garlic toast and salad.

    Time to switch gears and get into the "comfort food" mode. Roasted a chicken for dinner along with mashed redskin potatoes and corn/bean steamer. We have enough leftovers for tomorrow's din-din. DW had the white meat, and my plate had the the most flavorful part of the bird...the legs & thighs!

    Thanks, guys. I can hardly wait until I get to fully retire. THAT'S when I'll have more time to play in the kitchen. My birthday is Sunday and I'm getting an electric meat grinder. it's just in time as I'm down to 2# of my Italian sausage and 1 12" piece of Sopressata. I have always made sausage by hand grinding the pork, so it's going to be a treat to have the machine doing the work, including packing the casings. I think I'll get a foot switch so I don't have to indenture my wife to crank the packer. Maybe not, I don't want to spoil her.:eek: :p

    Anyway, tonight was the promised leftovers from last night. I just changed the veggie to broccoli since I got it on sale today for $.99 for a 3-stalk bunch.

    Dang Joe, that looks great. That would fit into my Magic Bullet and I could drink it. I can't wait until I can have solid food.

    The wife gave me the choice of her making dinner or me making it. I said since it's my birthday, I would spend the day playing in the kitchen. So I made a honey chicken stir fry with loads of veggies and a veggie fried rice. The wife made me an apple cake from scratch.
