BRAISED MEDITERRANEAN BEEF this is a really nice one pot stove top recipe fork tender done in less than 2 hours. Good with a beef chuck roast or maybe other cuts maybe venison ? And check the link below for fancy fast Greek chicken.

SERVES 6. ONE POT STOVE TOP COOK TIME 1 HOUR 45 MINUTES. Braised Mediterranean Beef

We know you're always looking for one pot dinner recipes that keep the menu fresh and fun. Well, our Braised Mediterranean Beef is a one-pot recipe full of comfort, flavor, and flair! It'll bring the family together around the table, and don't be surprised, when there's none left over! The combo of garlic, tomatoes, and red wine really add bold flavors that will make this a family-favorite!



What You'll Need
  • 1/4 cup vegetable oil
  • 3 pounds boneless beef chuck roast, cut into 1-1/2-inch cubes (other? venison?)
  • 2 onions, chopped
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 (28-ounce) cans Italian-style stewed tomatoes
  • 1 cup dry red wine
  • 1/2 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
What to Do
  1. In a soup pot over medium-high heat, heat oil until hot; brown beef on all sides.
  2. Add onions, celery, and garlic, and sauté 5 minutes or until vegetables are tender. Add remaining ingredients and bring to a boil.
  3. Reduce heat to low, cover, and simmer 1-1/2 to 1-3/4 hours or until beef is fork-tender.
Serving Suggestion

  • Round out the meal by serving this over a heaping helping of either buttered noodles or mashed potatoes. Either way it will ensure you won’t leave any of the flavor-packed sauce behind.

We've done one like this called "company pot roast" but this one is easier and really complete on top of the stove.

We had it with company of course -but- we're going to do this exact one next.

I made a great Tri-tip a few days ago. (Sample from work) About a 3 lb. marinated (Steakhouse marinade) Large Pyrex backing dish. Potatoes, carrots and onions. Drizzled Olive Oil on the veggies. Salt and fresh ground pepper on the veggies. Instead of 375° for 45-55 minutes, (per the meat directions) I lowered the temp to 350° for apprx 1 1/2. Covered the dish with a tight wrap of aluminum foil to keep the juices in and everything moist. It was killer

1st Tri-tip I have cooked. I will look for them now. Much better than a Chuck Roast. Was basically falling apart (like if I had done it for several hours in a Crock Pot.) when attempting to cut cross grain with a sharp Butcher knife. Mmmnnnn.........................Mmmnnn.......................
