Why not do both? By the way-you ever eat one of those things? Just wait till you clean it. te he Glenn
Actually, yes. My bro lives in KY and when we go there we catch gar. There is an old guy down River that will take all we catch. He cleans them, smokes them, and gives us a slab of smoked gar for every fish we give him. Don’t have to clean or cook and he does an outstanding job of smoking them!

Turtle is the one that puzzles me. There is suppose to be 7 kinds of meat in a Snapper. I don’t know how many I’ve cleaned and cooked but all I’ve managed to find was Turtle Meat. I never kill big ones turn them back for seed.
I get 4 different colors of meat out of a turtle. The least flavorful, but most tender is the loin and it is whiter than the neck meat. I have never found the other 3 meats, however, and the test is about the same ... kind of like dark meat and white meat in a turkey (not the taste of, but the difference in - if that makes any sense)..
