I have a couple of Enfield actions that I planning to build some custom rifles out of, however the economy has shelved that idea. What would a P14 action be worth if it was in excellent condition and intact? The other is a 1917 with the military sights removed in good condition. Both were made by Winchester.

Those actions were favored for building sporting and custom rifles when the rifles themselves were cheap, but with some exceptions, they are not especially favored by custom builders. The actions are heavy, bulky, and require a goodly amount of work to make them into quality sporters. Further, pre-threaded barrels are not available any more, so rebarrelling is an expensive job.

I see some ads asking high prices but realistically I would expect to get about $150 each. Some might say they are worth more, but I wonder if they will buy them at their own price estimates.

(The above assumes the actions are complete and include bolts.)
